Markers of inflammation can double within six hours of eating an anti-inflammatory food. Which foods are the worst?
may cause excessive swelling game It has a role in many leading causes of death and disability, including type 2 diabetes, obesity and heart disease. “But what are the stimuli that trigger the devastating inflammatory cascade?” You commonly hear about the anti-inflammatory nature of a high-fat diet over a long period of time, but the inflammatory effects “may not be limited to chronic intake, but may become apparent after consumption of a single food.”
Within hours of eating an unhealthy food, inflammatory markers like interleukin-6 (IL-6) can skyrocket and double within six hours. Most studies have found an increase in IL-6 after consumption of a high-fat meal. But the meals they tested were not only loaded with meat, eggs, dairy, and oil, but also junk refined carbohydrates like white flour and added sugar.

But when people are given straight sugar water without any fat, the results are the same, proving that added sugar is also anti-inflammatory, as you can see below and at 1:26 in my video. Why should we? Connected Inflammatory reactions after eating unhealthy foods? Because extensive research points to the idea that “persistent low-grade inflammation is an underlying factor in many high-mortality chronic diseases and diet may contribute to, or reduce, that inflammation.”
You will see in the graph below that IL-6 levels increased by approximately 3 pg/mL after the meal. (You can also watch it at 1:55 on my Video.)

When the levels start regularly procurement Up to about 3 pg/mL, it is associated with twice the risk of death. This increased the risk found across the board, a compilation of eight other similar studies, presumably because it Joined together With an increased risk of heart disease, it is the number one killer for men and women, even on the same level as some other major well-known risk factors like high cholesterol.
Now, not all high-fat foods Reason inflammation. More than a dozen studies combined show that whole plant foods like nuts do not increase markers of inflammation, even when Eat Up to a handful of nuts a day.
